No Mystery Easy Nut Milk Recipe

Even if you are not a fan of almond milk, you will love this recipe. There is nothing mysterious about nut milk, thus, to calm your fears about making nut milk, I did not give it a name to help you see that you can turn any nut into nut milk.

Almonds are the most popular nut too milk. It has a nutty almond flavor. It is pleasant and nutty. A little sea salt and a milk sweetener will push this up many notches.

Cashew is an all-time favorite nut to milk. To me, notice I said to me, it tastes like whole milk. It is mild and not nutty. It is very pleasant to drink without many additives.

Pumpkin seeds were a close second to cashew milk in taste. I swear one time after I flavored it with a little sea salt to cut the freshness and added a pinch of vanilla and a sweetener, it tasted like vanilla ice cream. It was the most pleasant tasting milk I ever made.

Honestly, I have not experimented with other nuts to have an opinion on their taste profile but you can feel free to experiment with other nuts such as:

Coconut, hazel nuts, pecans, walnuts, etc…

The Recipe:

Ingredients:
1 cup nuts or 1 cup seeds
2 cups water
Celtic Salt (or other sea salt)
Sweetener of your choice (in the natural world we normally use dates)
Vanilla (very optional)
NOTE:  Some people use a 1:1 ration of nuts/seeds to water. If you want thicker milk that is fine to do. I like thinner milk; thus, I use a 1:2 ratio of nuts to water.

Directions:
1. Soak the nuts for 6 – 8 hours to release any enzyme inhibitors. This will make the nut softer and easier to blend into milk. If you are using seeds, soak seeds 4 – 6 hours before milking them.

2. Before making the milk, pour off the soaking water and rinse the nuts or seeds.

3. Add fresh water to the blender and add the nuts/seeds whichever you are using.

4. Blend the nuts or seeds until thoroughly liquified, about 4 minutes. Turn the blender off every 2 minutes, if necessary to keep from burning it out.

5. Strain through cheese cloth or nylon nut milk bag to remove all the pulp. This step is very important if you are serving the milk to the elderly or young children.

You can enjoy cereal or drink as a cold or hot beverage.
